BBQ Chicken Wings and Cucumber Salad

Chicken wings are usually fried, but our delicious version is cooked and served with a refreshing cucumber salad.

Recipe Ingredients:

3 ½ lbs skinless chicken wings (try to buy split wings from your grocer, already cut at the joint with tip removed)

2 tbsp vegetable oil

Salt and pepper

1 ¼ cups BBQ sauce (your favorite brand)

2 cucumbers, thinly sliced

½ red onion, thinly sliced

¼ cup cider vinegar

¼ cup white wine vinegar

¼ cup water

¼ cup sugar

1 tsp salt

Preparation:

Slice cucumber and red onion and set aside in a heat-resistant bowl. 

Combine vinegars, water, sugar, and salt in a saucepan. Heat to a boil. Pour solution over cucumber and onion and refrigerate for 1 hour.

While the cucumber salad marinates, prepare the chicken wings. Preheat the oven to 450 degrees F. Season wings with salt and pepper and toss in oil. Spread out on a jelly roll pan and cook for 35 minutes (turn over once). Drain pan after 35 minutes and coat wings with BBQ sauce. Cook for an additional 10 minutes.

Serve family-style with cucumber salad.
