Using a traditional Italian combination of mozzarella, tomato, and basil known as caprese, this zesty sandwich makes an easy addition to your dinner repertoire.

Recipe Ingredients:

¼ cup pine nuts

¼ cup grated pecorino cheese

¼ cup olive oil

2 cloves garlic

1 cup basil leaves, packed

Salt and pepper

4 sandwich size (about 3 oz each) ciabatta rolls

4 oz fresh mozzarella 

1 medium size vine tomato

Preparation:

To make the pesto, place pine nuts, grated cheese, and garlic in a food processor. Pulse until the ingredients come together. Add basil leaves and process while slowly drizzling the oil into the processor. Season with salt and pepper. Remove pesto from processor into a plastic or glass container. Divide into 4 equal servings.

To prepare the sandwiches, slice the mozzarella cheese and tomato. Cut the ciabatta rolls open and fill the sandwich. Season the mozzarella and tomato with salt and pepper. Spread ¼ pesto mixture onto each sandwich.
