Beef Salad with Asian Greens

Enjoy this Asian-inspired salad on its own, or spice it up a little by adding sambal oelek, a red chili-based sauce.

Recipe Ingredients:

1 lb lean beef sirloin, all visible fat trimmed

8 cups mixed Asian greens (mizuna, mustard greens, mini bok choy, etc.)

 

For dressing:

¼ cup shallot, minced

1 oz pickled ginger

¼ cup pickled ginger juice

4 tbsp sesame seeds

¼ cup rice vinegar

3 tbsp honey

¼ cup soy sauce

3 tbsp sesame oil

Preparation:

Season sirloin with salt and pepper. Cook beef to medium-rare, 8 to 12 minutes per side depending on your oven/stove/grill. (For added heat, marinate in a mixture of oil and sambal oelek [chili-based sauce] in a Ziploc bag.)

While beef is cooking, prepare salad dressing. (Note: Dressing recipe yields approx 1 ½ cups.) In a bowl, mix all ingredients for dressing with a whisk. Set aside.

To serve, slice beef and place over greens tossed in sesame vinaigrette.
