If you enjoy beef but haven’t tried bison, or buffalo, meat, you’re in for a treat. Bison has a similar taste to beef but is lower in calories and fat; find it at natural food stores, local butcher shops, and some supermarkets.

Recipe Ingredients:

1 1/2 lbs ground bison 

1 can (about 14 oz) ready-to-serve black (or kidney) beans, rinsed and drained 

2 cups grape tomatoes, cut in half 

Salt and pepper 

4 whole wheat tortillas (7-inch diameter) 

4 leaves of romaine lettuce, rough chiffonade (cut into thin strips) 

4 ounces low-fat plain Greek yogurt 

1 cup fresh salsa 

1 lime cut into quarters

Preparation:

Brown bison meat in a hot, large sauté pan on high heat for about 6 to 8 minutes. Season with salt and pepper. Add rinsed and drained beans. Season and add halved grape tomatoes. Cook for 1 minute. Reduce heat to low and reserve in pan. 

Wash and dry romaine leaves. Cut the lettuce in a rough chiffonade (or simply chop lettuce). 

To serve, place equal portions of bison filling in each tortilla shell and roll/fold burrito into a packet. Accompany burrito with lettuce and top burrito with yogurt and salsa. Garnish burrito with lime wedge that can be used to squeeze on lettuce.
