1 4 large (roughly 10 oz each) baking potatoes, raw, with skins scrubbed
4 cups chopped broccoli, raw
4 oz low-fat turkey bacon, uncooked
3 tbsp water
8 oz reduced-fat shredded cheddar cheese
Salt and pepper (to taste)
Prick potato skins with fork several times. Wrap in damp paper towel and microwave until cooked through, about 5 minutes per potato. While potatoes are cooking, bring a skillet to medium-high heat. Place turkey bacon in skillet and cook until crisp, about 5 minutes per side. Remove potatoes from microwave. Place broccoli in small bowl with 3 tablespoons water. Cover with damp paper towel and microwave on high until steamed, about 4 minutes. While broccoli is cooking, split potatoes in half lengthwise. Crumble bacon into bits. Arrange each potato on a plate.Remove broccoli from microwave and drain water. Place ¼ of broccoli on each potato, topping each with 1 slice crumbled turkey bacon. Top each potato with 2 ounces shredded cheese and microwave on high until cheese is melted, about 10 seconds. Sprinkle salt and pepper over potatoes.
