Recipe Ingredients:

1 red pepper, seeded and diced

8 eggs, beaten

4 ounces sharp white cheddar cheese

Nonstick spray

Salt and pepper to taste

4 cups strawberries, halved

2 small bananas

Preparation:

Dice red pepper, removing stem and seeds. Reserve. In separate bowls, beat eggs and shred cheese with a box grater and set aside.

On high heat, spray a sauté pan with nonstick spray and add red pepper. Season with salt and pepper. When the pepper is soft, add egg and scramble until eggs are still moist. Fold in cheddar and remove from heat. Season with salt and pepper.

Slice ½ banana into each cup of strawberries and mix gently. 

Divide scramble equally, place into pitas, and serve while hot with bananas and strawberries on the side.
