Bump up the nutritional value of this traditional dish by using healthy brown rice and black beans, and give it some tang with Manchego cheese and sambal olek—a mixture of chiles, brown sugar, and salt found in the Asian section of many supermarkets.

Recipe Ingredients:

1 cup short grain brown rice

2 cups water

4 tbsp canola oil

1 can (14 oz) black beans

1 ¼ cups grated Manchego cheese (can substitute Pecorino Romano or any aged Pecorino)

¾ tsp sambal olek (can substitute hot sauce of choice, if desired) or more, to taste

2/3 cup quartered cherry tomato

Preparation:

Prepare brown rice per the instructions on the manufacturer’s package. Set aside and leave covered.

Drain and rinse black beans. Grate Manchego cheese with a box grater or microplane. Cut cherry tomatoes into quarters and set aside.

Put canola oil in large skillet over medium heat. Add brown rice, black beans, Manchego cheese, and sambal olek. Stir occasionally for about 5 minutes. Add cherry tomatoes. Toss to warm tomatoes (not to cook them).

Serve equal portions in four bowls.
