We’ve lightened up this distinctive Tex-Mex specialty by using skinless chicken breast and reduced-fat sour cream, plus whole-wheat tortillas if you can find them.

Recipe Ingredients:

1 packet store-bought fajita mix

1 tbsp cocoa powder

1/4 tsp paprika

1 medium onion, sliced

1 medium green bell pepper, sliced

1 lb boneless, skinless chicken breast

3 tbsp canola oil

Salt and pepper

8 fajita-sized (6-inch diameter) soft flour tortillas (whole-wheat if available)

1 avocado, sliced

1 cup salsa

½ cup reduced-fat sour cream

Preparation:

Mix fajita seasoning in small bowl with cocoa powder and paprika. Slice raw chicken into strips and season with salt and pepper.

Place oil into large skillet on medium-heat. Add onions and pepper and cook until softened, about 3 to 4 minutes. Add chicken. Add seasoning mixture and mix together, cooking about 4 to 6 minutes until chicken is cooked through and onions and peppers are soft.

Place 2 tortillas per plate and add chicken/onion mixture, avocado, salsa, and sour cream. Fold sides over to cover filling.
