1 packet store-bought fajita mix
1 tbsp cocoa powder
1/4 tsp paprika
1 medium onion, sliced
1 medium green bell pepper, sliced
1 lb boneless, skinless chicken breast
3 tbsp canola oil
Salt and pepper
8 fajita-sized (6-inch diameter) soft flour tortillas (whole-wheat if available)
1 avocado, sliced
1 cup salsa
½ cup reduced-fat sour cream
Mix fajita seasoning in small bowl with cocoa powder and paprika. Slice raw chicken into strips and season with salt and pepper.Place oil into large skillet on medium-heat. Add onions and pepper and cook until softened, about 3 to 4 minutes. Add chicken. Add seasoning mixture and mix together, cooking about 4 to 6 minutes until chicken is cooked through and onions and peppers are soft.Place 2 tortillas per plate and add chicken/onion mixture, avocado, salsa, and sour cream. Fold sides over to cover filling.
