Recipe Ingredients:

1 ½ lbs skinless, boneless chicken breast, uncooked 

8 oz fat-free cream cheese

1 cup prepared salsa

2 cups sweet white canned corn, drained

2 cups canned black beans, drained

Nonstick spray

Salt and pepper (to taste)

Preparation:

Coat skillet with nonstick spray and heat to medium-high. Sauté chicken breasts until halfway cooked, about 3 to 4 minutes on each side, adding salt and pepper.

In a separate saucepan, melt cream cheese on medium-high for about 2 to 3 minutes. Fold salsa into melted cream cheese. Add corn and black beans. 

Pour cream cheese mixture over chicken and simmer an additional 5 to 7 minutes, or until chicken is fully cooked.
