Need a refreshing side salad for a picnic or barbecue? Try this tasty falafel salad for something different that will please everyone, even vegetarians!

Recipe Ingredients:

1 box falafel mix (about 10 oz) e.g., Casbah or Fantastic Foods Falafel Mix

1 romaine lettuce heart, cleaned, drained, and chopped

½ cucumber, sliced

1 cup grape tomatoes, halved

1/3 cup tahini (sesame paste, usually available in peanut butter area of your grocery store)

1/3 cup water

¼ cup lemon juice

2 garlic cloves, chopped

Salt to taste 

1 tbsp parsley, chopped

Hot sauce (optional)

Preparation:

Make falafel per the manufacturer’s instructions. Once you have formed patties, pan fry them in canola oil over medium heat.

While falafel is cooking, prepare salad by cleaning, draining, and chopping romaine lettuce. Add sliced cucumber and tomatoes.

For dressing, combine tahini, water, lemon juice, garlic, and salt. Whisk with a fork.

To serve, place falafel on top of salad, dress with tahini dressing, and garnish with fresh parsley. Serve with hot sauce on the side if desired.
