Farfalle, also known as bow-tie pasta, is excellent when served with a touch of mascarpone, an Italian triple-cream cheese, and herbs for a richly flavored pasta dish.

1 box (10 oz) farfalle pasta
½ cup mascarpone
1 bunch chives, finely chopped
1 bunch parsley, stems removed and finely chopped
2 tbsp olive oil
Salt and pepper
Prepare pasta per the instructions on the package.While pasta is cooking, prepare herbs – rinse, dry, and finely chop. Reserve 1 teaspoon of each herb. Fold remaining herbs into mascarpone in a small bowl.Drain the pasta when finished cooking. Place olive oil in pot over medium heat Add pasta and cook for 1 minute. Add herbed mascarpone and cook until mascarpone melts over the pasta. Season with salt and pepper.Serve equal portions in four bowls and garnish with herbs set aside earlier.
