2 heads Bibb lettuce
1 lb oven-roasted turkey breast, skin removed (request ½-inch slices from your deli counter)
½ cup chopped walnuts
½ cup dried cranberries (e.g., Raisins®)
1 pear, cored and sliced
1 tbsp pear vinegar (if not available, can substitute ½ apple cider vinegar and ½ sherry vinegar)
3 tbsp olive oil
Salt and pepper to taste
Wash and chop the two Bibb lettuce heads. Drain excess liquid and place in a large bowl.Cut turkey into ½-inch cubes and set aside.Place walnuts and dried cranberries in bowl with lettuce. Core and slice pear and add to lettuce mix.Make a pear vinaigrette by whisking together pear vinegar and olive oil. Toss lettuce, pear slices, walnuts, and dried cranberries together with vinaigrette. Add salt and pepper to taste.To serve, distribute salad equally onto four plates. Top with turkey cubes.
