Fish Tacos with Lime Guacamole

You can almost feel the ocean breezes when you bite into these delightful fish tacos, flavored with a touch of lime juice.

Recipe Ingredients:

Nonstick spray

2 large onions 

1 lb mahi-mahi fillets (or other white fish e.g., tilapia)

¼ tsp seasoning salt 

2 avocados, peeled and pitted

1 small onion, diced

1 medium tomato, diced 

1 tbsp lime juice

¼ cup fresh cilantro, chopped

8 fajita-sized (7-8” diameter) flour tortillas 

1 cup jarred chunky salsa

Preparation:

Preheat pan to medium. Coat with nonstick spray and add mahi-mahi fillets. Sprinkle with seasoning salt and sauté until cooked through—about 3 to 5 minutes per side. Remove and slice into 3-4 inch strips. Set aside. 

While fish is cooking, mash avocados. Add onions and tomatoes, mixing well. Add lime juice and cilantro. 

Place two tortillas each on four plates. Layer 1 to 2 strips of mahi-mahi on each tortilla, top with ¼ guacamole mixture and 2 tbsp salsa. Fold and serve.
