1 ½ lbs mahi mahi, filleted and skinless
3/4 cup teriyaki sauce, store-bought
8 oz shiitake mushrooms, stems removed and caps sliced
1 head bok choy, cleaned and chopped
4 tbsp vegetable oil

Cut fish into three equal pieces. Marinade fish in ¼ cup teriyaki sauce for 20 minutes prior to cooking.Grill fish for 4 to 5 minutes per side. While fish is grilling, brush with the remaining teriyaki sauce to coat both sides.Prepare mushrooms and bok choy. In a sauté pan on high heat, add vegetable oil. When hot, add mushrooms and season with salt and pepper. Cook for about 5 minutes. Add bok choy, season with salt and pepper, and cook for 1 to 2 minutes longer, tossing frequently. Bok choy should retain its green color and be warm but crisp.Remove fish from grill and serve with mushrooms and bok choy on a plate.
