Recipe Ingredients:

Nonstick spray 

1 medium onion, diced 

1 garlic clove, minced 

1 red pepper, sliced 

2 cups zucchini, diced

1 cup yellow squash, diced

5 oz goat cheese

4 large (approx 10” diameter) tortillas 

1 cup pre-made salsa

2 large avocados, cut in 1 inch slices 

Sour cream

Salt and pepper

Preparation:

Pre-heat large skillet to medium-high. Add nonstick spray and onions, mixing occasionally. Cook until onions just begin to brown, about 3 minutes. 

Add garlic, red pepper, zucchini, and squash to onions, and mix occasionally. Once remaining vegetables begin to soften, add goat cheese and work into vegetable mixture. Add salt and pepper to taste. 

Place 1/4 of the cheese and veggie mixture onto each tortilla. Top each with 1/4 cup salsa and fold into burrito shape. Top with avocado slices and sour cream if you’d like. Fold and enjoy.
