Our Italian sandwich consists of layers of meats and cheese on crusty bread – and it may be the quickest dinner you’ve ever made!

Recipe Ingredients:

4 ciabatta rolls (approx 3 oz each)

4 oz prosciutto, thin sliced

2 oz sopressata (dry-cured salami, sweet or spicy), thin-sliced 

4 oz Genoa salami, thin-sliced

2 oz low-fat provolone cheese, thin sliced

4 roasted red peppers (store-bought)

4 oz marinated mushroom salad (store-bought; can substitute canned mushrooms and 1 tsp olive oil instead)

Balsamic vinegar

Preparation:

Cut open ciabatta rolls with a serrated knife and layer meats, cheese, and roasted peppers equally on sandwich. 

Top with balsamic vinegar to taste and serve with marinated mushrooms. 

For a twist, try toasting or pressing the sandwich for a warm panini.
