Get a taste of the Mediterranean with these delicious lamb burgers, livened up with a hint of mint and a refreshing tomato salad.

Nonstick spray
4 garlic cloves, peeled and chopped
1 lb ground lamb
1/2 tsp salt
1/2 tsp ground black pepper
3/4 tsp ground cumin
3/4 tsp dry oregano
1 cup low-fat yogurt
1 tbsp fresh mint, chopped
1 tbsp red wine vinegar
1/2 medium cucumber, peeled and chopped
4 medium tomatoes, diced
1 small onion, roughly chopped
2 tbsp balsamic vinegar
4 large (about 2 oz each) multigrain hamburger buns
Preheat a small skillet to medium and coat with nonstick spray. Sauté the garlic cloves until lightly brown. Mix the ground lamb, salt, pepper, cumin, oregano, and browned garlic in a bowl. Form four burgers. Preheat large skillet to medium. Add burgers and cook until desired doneness, about 4-5 minutes each side. While burgers are cooking, mix yogurt, mint, red wine vinegar, and cucumbers in a small bowl. Set aside. Combine tomatoes, onions, and balsamic vinegar in a separate bowl. Set aside. Split rolls. Place one patty on top of bottom of roll. Top each patty with 1/4 yogurt mint sauce and top with roll. Serve with tomato salad on side.
