Lamb T-Bones with Herbed Cauliflower

Recipe Ingredients:

1 head cauliflower, stem and leaves removed and cut into florets

2 tbsp olive oil

1 tbsp fresh thyme

4 lamb T-bone steaks (all visible fat trimmed, roughly 10 oz each with bone)

Salt and pepper

Preparation:

Prepare cauliflower by removing leaves and stem. Cut cauliflower head into florets and toss with 1 tablespoon olive oil; season with salt and pepper. Place cauliflower on jelly roll pan and cook for 25 to 30 minutes in an oven preheated to 400 degrees F. 

While cauliflower is cooking, season lamb steaks with salt and pepper. Heat a large sauté pan and add 1 tablespoon of oil. Cook lamb for approximately 4 minutes per side. 

When cauliflower is finished cooking (it should be tender), remove from oven and sprinkle with fresh thyme leaves. Serve each T-bone with portion of cauliflower.
