Similar to burritos but wrapped in lettuce, these Mexican-inspired wraps are great for dinner or to serve at a festive party.

Recipe Ingredients:

Nonstick spray

1 lb skirt steak, with all visible fat trimmed, cut into 2-inch strips

6 tbsp jarred red taco sauce

12 large leaves butter lettuce (Boston or Bibb)

2 cups brown rice, cooked

2 cups fat-free refried beans, warmed

6 tbsp sour cream

¾ cup jarred salsa

1 large avocado, sliced

Salt and pepper to taste

Preparation:

Coat a medium skillet with nonstick spray and heat to medium. Add steak strips and sauté until cooked through, about 5 to 6 minutes. 

Remove from pan and place in medium bowl with taco sauce, mixing until lightly coated.  

Arrange three large leaves of Bibb or Boston lettuce on each of four plates. Place equal amount of rice on each. Repeat with refried beans. Layer with steak. Top with sour cream, salsa, and avocado. Wrap up and enjoy.
