Mushroom, Ham, and Cheddar Frittata with Melon Salad

You won’t miss the eggs in this lightened-up version of a traditional frittata.

Recipe Ingredients:

Nonstick spray

1 medium onion, diced

1 clove garlic, minced

½ cup porcini mushrooms, sliced

4 cups egg substitute

4 oz cheddar cheese, cubed

8 oz diced ham, lean

Salt and pepper

4 cups cantaloupe, cubed

4 cups honeydew, cubed

Preparation:

Heat 12 inch oven-safe pan on stovetop on medium-high. After spraying pan, add onions and garlic, mixing occasionally. Once onions are soft, add mushrooms and cook for 1 minute. Add more cooking spray and pour egg substitute into pan. Mix very gently. As egg begins to firm, add ham and half of cheese and stop stirring. Cook for about 2 minutes to allow bottom to set.

Remove from stovetop, top with remaining cheese, and place pan in broiler on top rack for about 2 to 3 minutes. Slice into four equal portions and enjoy with two cups melon salad on the side. Note: Remember that the pan (and its handle) will remain hot so use caution while serving.
