4 6-oz bone-in pork chops, all visible fat removed

1 fennel bulb

2 peaches

1 sprig fresh mint

1 tbsp plus 1 tsp apple cider vinegar

Salt and pepper

Preparation:

Preheat oven/broiler to “broil.”

Season pork chops with salt and pepper. Place in broiler/oven and cook for 15 minutes (or until done), flipping every four minutes.

While pork is cooking, prepare fennel salad. Wash fennel and remove ‘core.’ Slice fennel. Remove pits from peaches and slice peaches. Remove mint leaves from stems. Toss items with vinegar in a bowl and season with salt.

When pork chops are done, remove from oven and place on four plates with cool fennel salad.
