Pork Tenderloin with Apple and Cranberry

Recipe Ingredients:

1 ½ lbs pork tenderloin, all visible fat trimmed

2 Granny Smith apples

1/2 cup raisins

10 oz canned, sweetened cranberry sauce

Canola oil, to coat tenderloin

Sprinkle of cinnamon

Ground nutmeg

Salt and pepper

Preparation:

Coat pork with canola oil and season with salt and pepper. Place in large sauté pan (oven-proof) or roasting pan.

Core two apples and cut into eighths.  

Place pan in oven and cook for 25 to 30 minutes. Midway through cooking, place apples and raisins in pan alongside pork. Sprinkle with cinnamon and nutmeg. When done, let rest for 10 minutes.

To serve, slice pork and accompany with roasted apples, pan sauce, and 1-inch thick slices of cranberry sauce.
