This easy-to-prepare sandwich is freshened up with a delightful infusion of rosemary.

Recipe Ingredients:

1 lb lamb steak, (choose a lean cut like sirloin, with all visible fat trimmed)

4 oz low-fat Monterey Jack cheese, sliced

4 Portuguese rolls (can substitute another hard roll, about 5 inches long and roughly 185 calories)

2 tbsp olive oil

1 sprig rosemary

Salt and pepper

Preparation:

Season lamb with salt and pepper and grill to desired temperature.

While lamb is grilling, place olive oil and rosemary in a sauté pan on low heat for 3 to 4 minutes. When oil is infused with rosemary, remove sprig.

Coat the Portuguese rolls with infused oil using a pastry brush. Place on grill to lightly toast.

When the lamb is done, let it rest for 5 minutes. Then slice thinly and assemble sandwiches. Place slices of lamb on rolls and top with cheese.
