1 egg, beaten
1 large (about 13 oz) can boneless salmon
1 cup bread crumbs
2 tbsp chopped parsley, fresh
Salt and pepper
3 tbsp vegetable oil
1 pound snow peas
1 tbsp soy sauce
1 tbsp sesame oil
1 tsp brown sugar
1 tsp sesame seeds
4 small whole-grain hamburger buns (about 1 1/2 oz each)
4 tbsp tartar sauce
4 romaine lettuce leaves
4 tomato slices
Drain liquid from can of salmon and place salmon in a bowl. Add beaten egg, bread crumbs, and chopped parsley, and season with salt and pepper. Combine all the ingredients and form four salmon patties. Heat a sauté pan over medium heat, add vegetable oil, and cook patties on both sides until brown. While burgers are cooking, mix soy sauce, sesame oil, and brown sugar in a bowl. Toss in snow peas and top with sesame seeds to make a snow pea salad. Serve each burger on a bun with lettuce, tomato, and tartar sauce, with a side of snow pea salad.
