Tangy citrus – orange, grapefruit, and lemon – adds a refreshing flavor to this easy salad.

Recipe Ingredients:

12 cups mache (can substitute spinach, kale, or other greens, as desired)

1 lb smoked salmon, sliced

1 orange (Cara Cara or red navel, if available), peeled, pith removed and segmented

1 red grapefruit (Star Ruby, if available), peeled, pith removed and segmented

1 Meyer lemon, peeled, pith removed and segmented

1 oz chives, finely chopped

2 tbsp white wine vinegar

6 tbsp olive oil

Salt and pepper

Preparation:

Rinse, clean, and drain mache. Set aside.

Prepare all citrus fruit by making segments and removing seeds. Chop chives very fine and reserve.

Make vinaigrette by drizzling olive oil into vinegar slowly while whisking to emulsify. Add salt and pepper to taste.

To serve, assemble salad by tossing salmon, mache, and citrus together with vinaigrette in a large bowl. Serve individual portions on four plates.
