Give your salad a Southwestern kick by adding some delicious barbecued shrimp, along with antioxidant-rich black beans and heart-healthy avocado.

Recipe Ingredients:

Nonstick spray 

1 lb medium shrimp, peeled and deveined, tail off 

1/2 cup barbecue sauce, divided 

12 cups mixed salad greens 

2 cups baby corn 

2 cups black beans 

2 avocados, sliced 

1/2 cup light ranch dressing

Preparation:

Preheat medium skillet to medium heat. Spray with nonstick spray. Mix shrimp in a bowl with 1/4 cup barbecue sauce. Saute until just cooked, about 3 to 5 minutes. 

While shrimp is cooking, toss mixed greens in large bowl with corn, black beans, and avocado slices. Remove shrimp and coat with remaining 1/4 cup of barbecue sauce. Add shrimp to salad. 

Top with ranch dressing, tossing well to coat. Arrange in four equal bowls.
