4 6-ounce pieces of lean sirloin, all visible fat trimmed
4 medium (2- to 3-inch diameter) russet potatoes
4 tbsp canola oil
Salt and pepper
1 bunch chives
1 cup low-fat plain Greek yogurt
Preheat the oven to 350 degrees F. Coat each potato with canola oil and season with salt and pepper. Place the potatoes directly onto the middle rack and bake for 1 hour. When the potatoes have baked for 55 minutes, season the sirloin with salt and pepper on both sides and oven-broil for 6 minutes each side (medium doneness). Finely chop the chives and reserve in a ramekin or small bowl.When the potatoes are finished cooking, remove from oven and let rest for 5 minutes. When the sirloin is cooked to the desired temperature, remove from broiler. Cut the potatoes into four wedges each. To serve, place steak and potatoes on four individual plates. Garnish potatoes with ¼ cup yogurt and chopped chives.
