Recipe Ingredients:
1 lb minced chicken breast (can be minced in food processor)
1 head Boston lettuce, washed and dried, with leaves separated
3/4 cup unsalted, dry roasted peanuts, chopped (or pine nuts)
1/2 tsp crushed red pepper, or to taste
3 tbsp ginger, finely minced
3 tbsp garlic, peeled and minced
1/2 cup shallots, peeled and minced
1/2 cup red bell pepper, cut to 1-inch pieces
1/2 cup cilantro leaves (or parsley), coarsely chopped
2 tbsp fresh fish sauce (or Kikkoman soy sauce)
3 tbsp fresh lime juice
3 tbsp sugar
1/4 cup cooking oil (not olive oil)
Preparation:
Heat oil until hot. Over medium heat, add crushed red pepper and ginger for about 30 seconds. Add garlic and shallots and cook for another minute, being careful not to burn them. Add chicken and stir until almost cooked. Add fish sauce, lime juice, and sugar and cook for another minute. Add red bell pepper and peanuts, stirring until there is no liquid left. Toss and mix with chopped cilantro.
Remove from heat. Serve warm or at room temperature by spooning mixture into lettuce leaves, then fold and eat.
